ELLA CANTA – Martha Ortiz Brings Modern Mexico to London

This spring renowned chef Martha Ortiz will launch Ella Canta, a new restaurant that promises to deliver the beauty, vibrancy and spirit of modern Mexico to London. The restaurant, located at InterContinental London Park Lane, takes its name from the Spanish for “she sings”, a phrase that symbolises the expressiveness, passion, pride, and femininity communicated throughMartha’s cooking. Ella Canta is also the perfect embodiment of Martha herself, who champions the culture and the food of Mexico and wants to tell the world about it.

At Ella Canta, Martha will showcase her celebrated style, which blends long-established cooking traditions with contemporary techniques and artistry. Drawing inspiration from her world-renowned restaurant in Mexico City, Dulce Patria, the new London menu will feature several of the famed dishes that have made her one of Latin America’s most exciting chefs.

Starters such as white fish ceviche topped with creamy hibiscus flower, piquin chile, cinnamon and pickled vegetables; and beef tartare with maiz gordita and Papaloquelite oil, will be followed by salads and main courses including seafood and lobster pozole, and cacahuacintle maiz with traditional garnishes.

The menu will also showcase mole, the rich, cacao-tinged sauce with a deep history that is said to date back to the 16th Century when each Mexican woman had her own family recipe. Martha will serve a tasting menu of seven moles in honour to this intricate dish, which contains an average of 20 to 30 ingredients and a hand preparation process that can take at least a day to accomplish.

Martha’s philosophy will be brought to life by internationally-acclaimed interior architects David Collins Studio, overseen by Creative Director Simon Rawlings. The team worked closely with Martha to realise her vision and incorporate subtle heritage references that create an authentic taste of modern Mexico in Mayfair.

The destination bar will offer carefully-sourced rare mezcal and tequila focus with signature cocktails and small plate style menu.

Located at No.1 Park Lane, Ella Canta will have a separate entrance at one of London’s most prestigious addresses, positioned where Mayfair, Knightsbridge, Hyde Park, and Piccadilly all converge. The new restaurant and bar will join Theo Randall at the InterContinental, bringing two renowned chefs under one roof and creating one of London’s sought-after culinary destinations.
