London, April 2018…// Palé Hall, North Wales, is delighted to announce the appointment of Adam Cleal as Head Pastry Chef. Adam joins the team at the elegant hotel, which was awarded three AA Rosettes in September 2017. Owned by Alan and Angela Harper, Palé Hall is located on the edge of Snowdonia National Park, set in one of the most stunning areas of natural beauty in Wales, offering an extensive menu of delectable cuisine and a vast variety of wines.

Adam Cleal’s appointment as Head Pastry Chef marks his return to Palé Hall following his work with the hotel in September 2016 to help with its launch. Adam honed his patisserie skills at two Michelin starred Gidleigh Park under the helm of Michael Caines in 2014 before joining the team at Palé Hall during their launch period. Following this, he worked at Lympstone Manor, Devon before being invited to return to Palé Hall to head up the pastry section, presiding over his own delicious desserts and sweet treats at the hotel for guests and locals.

Born in Poole, Adam lived in Costa Blanca for eight years before moving back to the UK to study for his NVQ at Tiverton High School. Adam then went on to work at Bickleigh Mill in 2011 for three years, where he took on an NVQ Level 2 apprenticeship. He also completed an ABC Level Patisserie course in 2012 at Petroc College.

General Manager Harry Shepherd warmly welcomes Adam’s appointment at Palé Hall, saying: “We are very excited to welcome Adam as Head Pastry Chef here at Palé Hall. He played a key part within our launch team and we hope his return to the hotel in this new role will help raise the bar for pastry offerings at Palé Hall even higher. We can’t wait to see what Adam has planned for our new afternoon tea menu”.

The re-imagined Five Star Grade II listed Palé Hall is one of the finest country house hotels in Wales and the UK. Owners Alan and Angela Harper have lovingly restored the historic house to its former glory, creating a peaceful and luxurious retreat surrounded by the natural beauty of the Welsh valleys on the edge of Snowdonia National Park.
