  • 4 oz de-stoned medjool dates
  • 6 oz. pecans
  • 2 tbsp almond butter
  • 1 tbsp coconut oil
  • 1/2 juice of a lemon

Cut the pumpkin into two chunky slices and bake in the oven (keeping the skin on) for 40 minutes at 150 degrees.Whilst the pumpkin is baking begin to make your pie base. Blend the nuts and dates in a food processor until a fine crumb consistency. Add the almond butter and 1 tablespoon of lemon juice and coconut oil then give a quick blast in the blender to combine. Press this mix into a 20cm flan tin, raising the mix up the sides of the tin and smooth out with the back of a spoon to create the pie case.Chill whilst you make the filling

Ingredients for Filling:

  • 100g Coconut cream
  • 50g Dates
  • 2 tbsp Maple Syrup
  • 2 tsp Cinnamon
  • Zest and juice of 1/2 lemon
  • Nutmeg to grate

After baking for 40 minutes, remove the pumpkin from the oven and check it is tender using a fork. Scrape the pumpkin from the skin and blend until you are left with a pulp-like consistency. Add the rest of the ingredients (the softened coconut cream last!). Whizz together, check the flavour for sweetness and spices and sweeten to taste using the maple syrup. Pour into chilled tart case and add a little grated nutmeg on the top. Chill for a minimum of 2 hours. Serve from the fridge as the filling will soften at room temperature
