This week the UK is celebrating National Vegetarian Week, so we’ve compiled a list of some of the very best veggie dishes in town…

This is Good Macadamia Nut Oil

To celebrate National Vegetarian Week, be sure to get your hands on This is Good’s macadamia nut oil. Approved vegetarian, vegan and cholesterol-free, This is Good oil contains only 15% saturated fat and is the new and healthier alternative to coconut oil, which contains a staggering 83% saturated fat. Because of the oil’s high monounsaturated fat content (76% – compared to coconut oil’s 6%), it helps to reduce the ‘bad’ fat cells in the body, with other benefits including a decreased risk of heart disease and a high Omega 9 content.

For a delicious veggie lunch or dinner, This is Good have developed a simple, filling and healthy recipe for roasted veg quinoa with soft goat’s cheese.

Serves 2

-1 small butter nut squash peeled and cut into bite sized pieces
-1 red onion, peeled and quartered
-50g rocket

-50g pomegranate seeds

-50g soft goat’s cheese

-250g quinoa

– 2-3 tbsp. macadamia nut oil

Preheat the oven to 180degrees C.

 Put the butternut squash and onion onto a baking tray and drizzle over 2-3 tbsp. macadamia nut oil. Season and toss to make sure everything is covered. Place into the oven for 25-25 minutes, until soft. 

Cook the quinoa according to packet instructions. 

 Place the quinoa into a large bowl and stir through the rocket and cooked vegetables. Place on your serving plates and sprinkle with pomegranate seeds and soft goats cheese.
