How much would you pay for a slice of toast? In San Francisco there’s a woman who charges US$5 per slice for her artisanal toast. This could be seen as outrageous but then many people are prepared to pay £25 for risotto and that is a bowl of rice. Seattle based Nathan Myhrvold and Francisco Migoya along with their cooking lab team have researched bread and its components from every angle. The publication date of their new book Modernist Bread, The Art and Science will be announced this week.
