How much would you pay for a slice of toast? In San Francisco there’s a woman who charges US$5 per slice for her artisanal toast. This could be seen as outrageous but then many people are prepared to pay £25 for risotto and that is a bowl of rice. Seattle based Nathan Myhrvold and Francisco Migoya along with their cooking lab team have researched bread and its components from every angle. The publication date of their new book Modernist Bread, The Art and Science will be announced this week.

Sartoria on Savile Row has launched an all new breakfast menus, offering guests the chance to start the day with creative southern Italian dishes inspired by Chef Patron Francesco Mazzei’s Calabrian heritage. Eggs Purgatorio celebrates the spicy Calabrian specialty of ‘nduja, baked with spicy tomato and eggs and served with crostini. Further dishes include the Milano, a saffron risotto cake served with a soft-boiled egg and wild mushrooms, and the Smoky of aubergine puree, smoked fish and a poached egg.
